Vinification and Aging

Whole-cluster maceration for 12–16 hours. Pressing. Spontaneous fermentation in stainless steel. Aging on fine lees until spring. Further aging (2 months) in 54-liter glass demijohns.

Burgundy bottle, natural cork.
